There’s no way I could cook a meal from scratch every night of the week.
If you’re anything like me, you’ve got a family and a job. And if you get home for dinner on a weeknight, it’s already dinner time when you arrive. Not time to start seasoning meat, boiling rice, and chopping celery.
But, you do have a few hours on the weekend. It might be Friday night; it might be Sunday morning.
In 2 – 3 hours tops – you can make a whole week’s worth of dinners.
And, you have a freezer.
In the past couple of years, I’ve used my freezer more than ever before. Portioning & thawing out a roasted chicken, and a pot of soup or chili is just as delicious as when it’s first cooked.
Invest the time in batch cooking. You won’t be disappointed.
